New Orleans Recipe - Roux And What is That? No Fail Roux

Every good cook wants to know the secret of the roux in cooking.

Roux is basically brown flour used to thicken the consistency of gravies or in New Orleans just about everything.

Most recipes for dishes utilizing a roux tell you to sautee' your vegetables in oil and then add the flour and stir and cook until it is brown enough.

One problem with this approach is it takes a lot of time and many people who don't cook a lot end up burning the roux and all the seasonings and then you have to start over.

Today you can buy packaged roux mixes at most supermarkets but if you cook a lot that can get expensive. My mother learned how to prepare her flour and make it into a roux so that it was ready anytime she needed some. When I was young, those products that are packaged were not available and she cooked a lot.

My mother developed what she called her NO FAIL ROUX and taught it to me.

When I am cooking, this allows me to thicken my gumbo or other dish at anytime during the cooking process rather than at the beginning when I am cooking my seasonings and vegetables. I also don't burn my roux and have to throw everything away and start over.

So here is the NO FAIL ROUX

Preheat your oven to 250 degrees. In a large baking pan, spread 5 ponds of all-purpose flour. This does has to be watched and stirred constantly to prevent burning. The process will take about one hour. Let the flour brown to peanut butter color Place this in a large jar or airtight container. The mixture can be refrigerated or simply left in your pantry and will last indefinitely. After you have prepared your seasonings just add the flour to get the desired consistency and voila your roux is ready. I sometimes thicken my gumbo at the end if I don't like the consistency.

New Orleans Recipes - Jambalaya

Another dish that my mother and grandmother made on a regular basis was Jambalaya.

To the uninitiated, this is sort of like the creole version of Chinese fired rice except much better. In my house it was always a main dish that didn't need any side dish because it was so good and so filling. Now my brother used to eat it with his red beans but that is another story. This dish can also be prepared and used as a compliment to meats and barbecues or at parties.

This recipe does not have shrimp but my mother would often add shrimp to the Jambalaya. If you want to do that just peel and devein your fresh shrimp and add it to the mixture and when it is finished your shrimp will be fully cooked. I would not add more than one-half pound of shrimp to the recipe below. I like to substitute andouille sausage for the smoked sausage.

Bon Apetit'

3 to 4 c. smoked sausage

2 large onion, chopped

1 bell pepper, chopped

1/4 c. minced garlic

2 to 3 Tbsp. minced parsley

2 tsp. salt

3 Tbsp. Worcestershire sauce

1 tsp. black pepper

2 c. rice

2 c. dry sherry or chicken broth

16 oz. tomato sauce

Bacon fat or oil

Saute onions and bell pepper in bacon fat or oi!. after 5 minutes, add garlic and saute. Slice sausage and add. Cook 15 to 20 minutes. Add tomato sauce, rice, wine, or chicken broth, water, and remaining ingredients. Cover and cook over medium high for 5 minutes; lower heat and simmer until rice is fully cooked

Bruschetta is a food that originated in central Italy. In Tuscany, bruschetta is called fettunta - which literally means 'oiled slices.' In the USA, we tend to think of bruschetta mainly as grilled slices of Italian bread with fresh tomatoes, basil, olive oil, and garlic.

In Italy it is one of the easiest and quickest dishes to prepare for a casual dinner or an evening with family or friends. Bruschetta is sure to please each guest, with its wide array of ingredients that complement each other well. It's also a lower calorie version of pizza. Any topping you can put on pizza, you can put on bruschetta - just less of it. It makes a great snack, appetizer, and even a meal!!

Following The Basic Art of Italian Cooking tm method, bruschetta is quick and easy to prepare, since you can choose almost anything you may have in your pantry for toppings. If you follow the classic recipes for bruschetta, there are only several key ingredients needed. All you need is an oven for toasting the bread, great authentic Italian bread (should be crusty on the outside and soft inside), garlic, and extra virgin cold pressed olive oil.

Like all great Italian recipes, each type of bruschetta is made with a small amount of ingredients and each ingredient is important to the taste of the finished product. The most important ingredient is the bread. It should be a bit crusty outside and can be day old as well. Italian style bread or a French style baguette each work well.

The next important ingredient is extra virgin, cold pressed olive oil, but only a small bottle is needed. The olive oil should simply be drizzled on top of bruschetta - this saves calories and olive oil! To 'drizzle' place your thumb over the spout while pouring so only a 'drizzle' of olive oil comes out.

You can't miss with a selection of bruschetta for appetizers or a choice of three types of bruschetta for a light meal. If you'd like to throw a bruschetta party for the holidays, you can put together a simple and quick, yet fun and delicious party by arranging the following ingredients on a table and letting the guests choose their toppings.

Place sliced crusty (preferably day old) bread on a cookie sheet, and drizzle with ½ tablespoon of olive oil. Place in broiler till golden, then turn over and do same to the other side. Or, if you would prefer to make it yourself, just combine any of these toppings and serve:

* 1 bottle of extra olive oil with pourer top for drizzling * Fresh mozzarella cut into small cubes * Cream cheese (regular, low fat, or fat free), and chopped hazelnuts and walnuts * A can of tuna, chopped celery and celery leaves * Chopped olives - green and black * White chicken meat cut into cubes or thinly sliced, with chopped green olives * Grilled vegetables - eggplant or peppers; onions, chunks of cheese * Tomatoes, cut into small cubes (should be fresh and ripe plum tomatoes), fresh basil, chopped garlic * Celery and celery leaves chopped * Basil leaves chopped * Anchovies canned in olive oil * Lettuce, baby spinach or arugula * Thinly sliced ham, prosciutto, salami, cheese chunks * Pesto sauce (you can buy pre-made), shredded mozzarella * Canned tomato paste (1 tbsp per slice of bread), shredded provolone or mozzarella, dash of oregano

Be sure to drizzle with a light touch of olive oil after you have placed on the toppings.

If you are serving on individual plates, drizzle some olive oil on the bottom of the plate, and place the bruschetta in the center with a sprig of fresh parsley or basil on the side for a nice touch.

I do, and that is why I came up with some exciting, flavorful foods for taking on the trail, that give your taste buds joy and eliminate the monotony of the same bland foods day after day. Here are five easy recipes that make eating while backpacking something to enjoy, and no longer just tolerate.

Mini Pizzas

These are easy to make using English muffins, a packet of pizza sauce, and cheese. The English muffins can be rewrapped in tinfoil, while the pizza sauce can be put in a small plastic container, and the cheese in a zip lock bag. When you are ready for this meal you simply add the pizza sauce and cheese on top of the English muffin and wrap them in tin foil. In order to prevent the cheese from sticking to the tin foil, make it loose on top. These can be cooked on top of a stove, or by leaving in the sun for an hour or so, just long enough to melt the cheese. Other ingredients, such as onions, mushrooms, or black olives can be added for a more flavorful variety of toppings.

Biscuits & Gravy

The biscuits can be made at home. I pack them in a water bottle with a large opening on top, since this saves space. The gravy mix is easy to pack since most come in a powdered form than can be put in a Ziploc bag. I find mixes that only need water added, but you can also find one that needs milk, and bring along some powdered milk. When ready for this meal you can head some water and the gravy mix and pour it over the biscuits. The biscuits do not need to be reheated, since they will get warm from the gravy. You can also bring jelly packets and use any left over biscuits as a treat with jelly spread on them.

Noodles With Wild Mushrooms

There are many varieties of mushrooms that are sold in their dried form. These can be purchased at most grocery stores, and an assorted pack of wild ones can provide a wonderful variety of tastes. The noodles can be any type, but I find the flat varieties most efficient for space and durability. Other than the noodles and mushrooms, a couple tablespoons of butter, as well as salt and pepper, are needed. The dried mushrooms need to soak for a couple of hours before being cooked. The liquid used to soak them is reused to cook the noodles in. After the noodles are cooked, they need to be mostly drained, with a slight amount of liquid left in. Add the mushrooms, butter, salt and pepper. Another great addition is some parmesan cheese sprinkled on top.

Backpacking Recipes That Don't Need Cooking

Pita Pockets with Hummus

This is a quick, filling, and versatile meal. Pita pockets can be found at most grocery stores, and are ideal for packing since they are flat and compact. Hummus is great because it provides a lot of protein and flavor, and can be purchased in powdered form where water is added to reconstitute it. The hummus can be spread inside of the pita pocket, and cucumbers and olives can be added to enhance the flavors.

Tuna Fish on Tortillas

This is a great meal that is easy to make. The tuna fish can be purchased in a pouch. Sweet relish should be packed in a leak-proof plastic container, and mixed in with the tuna during preparation of this meal. The tuna and relish mixture is then heated and served on top of a small tortilla. A slice of cheddar cheese can be put on top of the tuna, and will melt slightly from the heat of it. The tortilla can then be folded in half, or rolled up. This is surprisingly good tasting and very filling.

Compile a list of what you’ll need. Make a list of all the ingredients you’ll need, compiling a rough list of how much you’ll need of each ingredient. Before you go out to the grocery store, check your own supply of ingredients (and double check expiration dates), so you’ll know how much you need to pick up. Check your baking supplies for wear, as well.

Make sure you have enough containers to keep the cookies in, and if you’re giving them out as gifts, pick up some decorative plates or tins to hold them. (Dollar stores have some great items for storing and giving out cookies!)

Step 3:

Make your dough. If you don’t have enough time to make the dough and bake on the same day, you can freeze the dough for days (sometimes even weeks) before you begin baking. Wrap each type of dough into separate parcels, and identify each by writing the name of the recipe on the plastic wrap.

Step 4:

Bake your cookies. Some recipes call for dough to reach room temperature, so be sure to leave enough time for frozen or refrigerated dough to get to a lower temperature. Start baking cookies whose recipe calls for the lowest oven temperature first. Then proceed to the next recipe, working your way up in temperature.

Cool cookies on a clean dish towel, wire cooling racks or aluminum foil. Once the cookies are completely cooled, line containers with wax paper and then with layers of cookies. Cookies can also be frozen for up to two weeks inside a container, or if you wrap them in small stacks, you can freeze them for even longer. Defrost the cookies by leaving them out until they reach room temperature.

At home my mom didn't cook much with herbs, like rosemary, basil or dill. She used such herbs mainly for treating everyday maladies. But then I got married and I started to cook more often. I love to experiment and cook new recipes. So I started to try new ingredients, new condiments, seasonings. So I discovered herbs for cooking. Herbs enrich the flavor and odor of food. They just give that special touch to a dish.

My other passion is seafood - all kinds of seafood. So you can already guess that I love to combine seafood with herbs. Dill, fennel and marjoram are herbs that combine very well with fish. Not everybody like coriander (or cilantro) but it is very often used in the Asian cuisine, and coriander goes perfect with a coconut seafood recipe. Ginger and lemongrass are also common herbs used in Asian recipes. Bay and thyme are great seasonings for seafood soups, stews and chowders. Parsley and chives go always well with a seafood salad. And basil is the perfect partner for tomatoes. Therefore, if you are preparing some seafood recipe with a tomato sauce you can enrich its flavor with basil leaves (preferably fresh leaves).

New England Clam Chowder

Ingredients:
2 pounds clams, scrubbed and rinsed
4 slices bacon, cut crosswise into strips
2 tablespoons butter
1 onion, finely chopped
1 tablespoon fresh chopped thyme
1 tablespoon fresh chopped parsley
1 large potato, cut into small cubes
1 leave leek
1 1/2 cup milk
1 cup heavy cream
salt and pepper to taste

Directions:
1. Put the clams in a large pot with some water and cook over high heat for about 5 to 10 minutes or until the clams are open. Discard any unopened clam. Strain the clams, reserving the broth. Set aside to cool down.
2. When the clams are cool, remove them from their shells and chop the big ones.
3. Cook the bacon until brown and crisp, then pour off all the bacon fat, reserving the bacon. In the same pot, melt the butter and saute onion until it get soft but not burnt. Add thyme, potatoes, clam broth, milk and leek and bring to boil. Cover and simmer until the potatoes are tender.
4. In a blender or food processor blend until smooth.
5. Pour the blended mixture in the pot. Stir in the clams, cream and bacon and season with the pepper and the salt to taste. Place the pot in the heat and slowly reheat for 2-3 minutes. Garnish with parsley and serve.

Layered Crab Salad Recipe

Ingredients:
4 cup torn lettuce
2 cups (1/2 pound) fresh pea pods, cut into 1-inch pieces
1 1/2 cup chopped red peppers
2 cups chopped cucumber
1 1/2 cup crabmeat or 1 package (8 oz.) imitation crabmeat
1 cup mayonnaise
1 tablespoon sugar
1 teaspoon dried dill weed or 1 tablespoon chopped fresh dill
Sweet red pepper rings
Fresh dill sprigs
Salt to taste

Directions:
1. In a 2-1/2 quart clear glass serving bowl, layer lettuce, pea pods, chopped peppers, cucumber and crabmeat.
2. Combine mayonnaise, sugar and dill; spread over crab. Season with salt. Cover and chill several hours or overnight.
3. Garnish with pepper rings and dill.

Note you can also use left over’s like chicken, roast beef etc to make these for the kids lunches the next day. The concept is sushi, but there are many applications.

2. Simple stir fry. Grab some basic vegetables; I use cabbage, bean sprouts, chick peas and carrot (thin sliced) Some thin cuts of meat, I prefer chicken but any will do. Udon noodles Soy sauce Rice Cook the meat with a modest amount of soy, till nearly done, add vegetables, as the vegetables begin to cook add a small cup of water to create a soup, then add udon, cook for a few more minutes. Serve with rice to the side. This dish takes me about 20mins to prepare in total. Simple tasty and healthy. Perfect Cheesecake Crust

When making a cheesecake, it is important to get the base or cheesecake crust right otherwise it can become crumbly and fall apart when you cut it or try to eat it. Follow these simple directions for a perfect cheesecake crust everytime.

Generally speaking, you need to use half the amount of butter compared to the amount of biscuits required. For example, if your recipe requires 180g of biscuits then you would use 90g butter.However, if you are using biscuits such as a shortbread, you can use a little less butter because of the butter content that is already in shortbread.

1. Put biscuits into a plastic bag and crush with a rolling pin or put biscuits into a food processor and pulse to the desired texture of fine crumbs. Add butter and any other required ingredients and mix with a spoon until all ingredients are combined. To test that you have the right consistency, presssome of the mixture up against the side of your mixing bowl with the back of the spoon. If the mixture stays against the side then you have the right consistency. If it crumbles down, add a littlebit more melted butter.

2. Lightly grease the inside of your springform cake tin with butter or spray on oil. Press biscuit mixture into the base and up the sides of the tin (if required) using the back of a spoon or the tips of your fingers. Ensure that you have an even coverage all around.

3. Stand your cake tin on a bench and using a straight sided glass, work it over the biscuit base and around the sides of tin to smooth out the crust. Refrigerate crust for at least 30 minutes if baking is not required in your recipe.

4. If your recipe is for a baked cheesecake, don't try and remove the cheesecake from the pan until it has been refrigerated for a minimum of 4 hours, preferably overnight for bigger cheesecakes.This allows your cheesecake to set properly and makes it easier to cut.

When your cheesecake is set, stand the cake tin on an inverted glass. Release the catch on the side and gently lower it over the glass. Using a sharp knife, gently run it around the edge of your crust to neaten it up. Do this very carefully so that the crust doesn't crack.

5. If you wish to remove your cheesecake from the base of the tin, you need to make it with the base of the springform tin upside down. It is the ridge around the base that makes it difficult to remove the cheesecake once it has been made.

The other method you could use is to line the base with cling wrap for a no bake cheesecake or foil if making a baked cheesecake prior to making. Let the wrap or foil hang over the sides of the tin. This way you will be able to remove the base easier by gently sliding a spatula underneath and sliding the cheesecake onto a serving plate. Keep in mind though that youwill still have either cling wrap or foil underneath when serving.

Directions 1 Preheat oven to 325 degrees F (165 degrees C). Grease a 10 inch tube pan with 2 tablespoons butter. Sprinkle pan with 1/4 cup sugar. Mix together 2 3/4 cups flour, baking powder and salt. Set aside. 2 In a large bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the flour mixture. Dredge blueberries with remaining 1/4 cup flour, then fold into batter Pour batter into prepared pan. 3 Bake in the preheated oven for 70 to 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Fresh Blueberry Pie Recipe

10 1/2 cups fresh blueberries 1 cup sour cream 2 tablespoons flour 3/4 cup sugar 1 teaspoon vanilla 1/4 teaspoon salt 1 egg -- beaten 1 pie crust (frozen) 9 inch * topping * 3 tablespoons flour 3 tablespoons oleo 3 tablespoons pecans (chopped fine)

Combine and mix flour, sugar, vanilla, salt and egg at medium speed for 5 min. or until smooth. Stir in blueberries, pour into 9 inch pastry shell, bake at 400F for 25 minutes. Combine: 3 T flour, 3 T oleo, and 3 T. pecans . Sprinkle over top of pie. Bake 10 minutes more. Chill before serving.

Low-Fat Blueberry Buttermilk Muffins Yield: 12 Muffins 2 c Whole wheat pastry flour 1 t Baking soda 1 1/4 c Buttermilk 2 Egg whites, lightly beaten 1/2 c Honey 1/3 c Vegetable oil 1 c Blueberries, fresh or frozen Sift the flour and baking soda together. In a separate bowl, whisk the next 4 ingredients together until creamy, then stir in the blueberries. Form a well in the center of the dry ingredients and pour in the wet. Fold together until the batter is moistened yet slightly lumpy. Pour into greased muffin tins and bake in a preheated 350F oven for 25-30 minutes.

Blueberry Cobbler

2/3 cup sugar 2 tablespoons cornstarch 3/4 cup water 3 cups fresh or frozen blueberries 1 teaspoon melted butter 1 teaspoon ground cinnamon 1 cup sifted all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1/3 cup milk 3 tablespoons melted butter

In a saucepan, combine sugar and cornstarch, stir in water. Bring to a boil; stirring constantly, boil for 1 minute. Add blueberries. Pour blueberry mixture into a lightly buttered 1 1/2-quart baking dish or 9-inch pie plate. Sprinkle with cinnamon and drizzle with 1 teaspoon melted butter. Sift together the flour, baking powder, and salt. Pour milk and 3 tablespoons melted butter into a measuring cup; add to flour mixture all at once. Stir just until mixture is moistened and forms a ball. Drop spoonfuls onto the blueberries. Bake at 425° for 25 to 30 minutes, or until lightly browned.

Breakfast Recipes

Undeniably a treat, but a perfect late brunch dish which we always serve at New Year. This can be assembled in advance, see notes below.

Step 1: I small onion finely chopped, 500 g sliced mushrooms, 2 tbsp butter, 1/2 cup creme frâiche.

Cook the onion in the butter until golden, then add the mushrooms cooking on high until the liquid evaporates. Add the creme frâiche and cook until it is absorbed. Season well with salt and pepper. Transfer the mushrooms to a large oven proof serving dish.

Step 2:Make 500 ml Bechamel sauce following your usual recipe, but add 1 cup creme fraiche at the end, making a Mornay sauce. Season very well with salt pepper and nutmeg. Spoon half the Mornay sauce onto the bottom of the dish, over the top of the mushroom mixture.

Step 3: Beat 12 eggs with salt and pepper, add to a pan in which you have melted 6 tbsp butter. Stir over a medium heat. Once the eggs start to cook remove them from the heat and add a further 2 beaten raw eggs. Do not worry if the eggs seem very undercooked; they will complete their scrambling when the assembled dish has its final cooking.

Step 4:Pour the egg mixture in to the baking dish. Spoon the remain Mornay sauce over the top and sprinkle with 2 tbsp parmesan cheese. At this point the dish can rest in a warm place for up to an hour. Place the dish in an oven at 225 degrees centigrade for 10 minutes or until the cheese has browned. Serve at the table in the dish.

Preparation in Advance:

The mushroom mixture and Mornay sauce can be cooked the day before. Spread the cooked mushrooms and 1/2 the Mornay

If you're looking for a lighter dessert, Filipino pastries may be just what you need. Our native pastries cover everything from small bite-size tarts to tropical fruit pies. They may seem complicated at first glance, but they are actually one of the easiest Filipino food recipes. In fact, if you're just starting out, pastries make a great beginner recipe. Start with simple snack tarts such as this one.

Easy Caramel Tarts

Ingredients: 1 tbsp flour 1 c milk 1 c golden syrup 1 c brown sugar 1 tbsp white sugar 1 tbsp butter 2 eggs, separated ½ tsp vanilla

Procedure: Beat the egg whites until stiff, then beat in the white sugar. Set aside. In a saucepan, combine the rest of the ingredients and bring to a boil, stirring constantly. Pour into baked pastry shells. Top with the egg white mixture and bake for about 10 minutes or until the meringue turns brown.

Puto and kutsinta

Puto a steamed cake made from rice flour, often topped with cheese or salted eggs. It is often sold with kutsinta, a brown jelly cake served with grated coconut. The two go together because the soft, grainy texture of the puto contrasts the tart smoothness of kutsinta. Both are among the simplest Filipino recipes; you can make a batch of each cake in less than two hours.

Puto

Ingredients: 2 cups flour 1 cup sugar 2 cups milk 6 tsps baking powder 3 eggs (use only egg whites for a lighter cake) Procedure: Combine all the ingredients except the egg whites. Mix well and let stand for one hour, then fold in the eggs. Pour into baking pan or muffin pans and steam for about one hour.

Kutsinta

Ingredients: 1 cup rice flour 1 tsp lye water 3 cups water 2 cups packed brown sugar

Procedure: Mix all the ingredients in a bowl; beat well. Half-fill a muffin pan with the batter, then steam covered over 2 inches of water for about 30 minutes. Top with grated coconut.

Bibingka

Bibingka is actually an Indian dish (bebinca), but the Filipino variety is unique because it uses rice flour instead of white. It also comes with a variety of toppings such as butter or margarine, cheese, salted eggs, or grated coconuts. Bibingka is a popular snack in the Christmas season, where it is often sold with puto bumbong (same as puto, but cooked in bamboo vessels and flavored with coconut or purple yam)and other Filipino cooking recipes. It is traditionally cooked in charcoal ovens, which gives it a smoky flavor. Of course, you can also tweak the recipe and bake it in modern ovens. Here's how.

Ingredients 2 c plain flour ¼ c baking powder ¾ c sugar 1 ¼ c coconut milk 3 eggs, beaten ½ c Edam cheese, grated ½ butter, melted ½ c grated coconut 1 tsp salt

Procedure: Preheat your oven to 375oF. In a bowl, dissolve the sugar in coconut milks and add in the eggs. In a separate bow, sift the flour, add the baking powder and salt, then sift again. Combine with the egg mixture and beat well. Pour into prepared pans and bake for about 15 minutes. Top with cheese and resume baking for another 20 minutes, brushing with margarine occasionally. Give it a final brush when done, and serve with coconut on the side.

Finding the right weight gain foods

For some people actually trying to gain some weight can just be as difficult for those people who are trying to lose it. There are plenty of reasons why a person may find themselves being over weight and there are many reasons as to why a person actually weighs less than they should. However in this article we provide some tips on ways of helping such people to find the right weight gain foods for them to increase their weight.

Tip 1 - Increase your calorie intake

The first thing you should do is weigh yourself and then look at just how many calories you are consuming currently each day. Then what you need to do is actually increase your calorie by 500 each day.

Tip 2 - Eat Big Meals

Instead of you eating small meals at regular intervals as would be suggested to many people who are trying to lose weight you should be aiming to eat much larger meals instead. Also between each meal you should attempt to have a few snacks as well. Although the snacks you eat should be of a healthy nature. Try something like a few raisins or dried fruit which will increase both the number of calories and carbohydrates that you consume. Plus ensure that the snacks you eat provide you with sufficient amounts of nutrients that are essential when your body is changing and growing.

Tip 3 - Health Fats

If you are looking for a balanced and healthy way for you to gain weight through the foods that you eat, then you should be trying to use more canola or olive oil in recipes in place of butter and also avoid creamy sauces as well.

Tip 4 - Weight yourself weekly

It is important that you should be aware that you are unlikely to seen a sudden increase in your weight. But certainly putting on 1 or 2 pounds each week is extremely good and so by the end of each month you should find that you have gained an extra 5 to 8 pounds on top of what you originally weighed.

Also if you find at any stage when you are using particular kinds of weight gain foods in order to help improve your weight that you are not actually putting any more on then it is time to start looking at actually increasing the amount of calories you are consuming. Again it is best if you just increase the amount of calories you are consuming to no more than 250 on top of the additional 500 you are already consuming each day. However hopefully this will not occur until much later when you have actually been able to gain weight that suits your body size and shape.
